Tartare of scallops | Seasoning to cut Lemongrass or Lime

Recipe imagined by Arthur Huet, assistant of the Savant Food

For 4 people :

- 16 large scallops
- 1 grenade 
- 15 coriander leaves 
- salt and pepper
- 1 lemon

 

    1. Make thin slices of scallops and arrange them at the bottom of the plate.
    2. Salt, pepper and zest the lemon on the scallops.
    3. Chop the coriander leaves and add them to your plate.
    4. Arrange some pomegranate seeds.
    5. Serve with a few shavings of Lemongrass or Lime Carving Seasoning.
