Coleslaw | Shallot Carving Seasoning

Recipe imagined by Arthur Huet, assistant of the Savant Food

For 4 people :

- 1/2 chou
- 50 gr d'emmental
- 20 parsley leaves 
- 20 gr of parmesan  
- 50 gr of cottage cheese 
- 1 lemon 
- Salt pepper
- 5 potatoes
    1. Finely chop the cabbage.
    2. Make small dice with the Emmental. 
    3. Peel and cook the potatoes.
    4. Mix the cabbage, the emmental and zest the lemon on the mixture.  
    5. Drain and let the potatoes cool.
    6. Dice them and add them to your preparation.
    7. Season with olive oil, cottage cheese and lemon juice.
    8. Mix and sprinkle with parmesan.
    9. Finish with a few shallot pencil shavings.
