Quinoa Salad | Shallot Carving Seasoning
For 2 people :
- 100 grams of quinoa
- 20 cherry tomatoes
- 1/2 red onion
- 1/2 cucumber
- 50 g of chickpeas
- 2 tablespoons walnut oil
- 1 tablespoon of balsamic vinegar
- 1 teaspoon of mustard
- a few tarragon leaves
- Cook the quinoa as directed on the packet.
- Chop the red onion.
- Cut the cherry tomatoes in half and the cucumber in small cubes.
- Mix the oil and vinegar then add the mustard.
- Chop the tarragon and stir into the vinaigrette.
- Drain the quinoa and run it under cold water.
- Mix all the ingredients, keeping the vinaigrette aside.
- Just before serving, add the vinaigrette and cut a few shavings of the shallot pencil.
