Quinoa Salad | Shallot Carving Seasoning

Recipe imagined by Arthur Huet, assistant of the Savant Food

For 2 people :

- 100 grams of quinoa
- 20 cherry tomatoes
- 1/2 red onion
- 1/2 cucumber
- 50 g of chickpeas
- 2 tablespoons walnut oil 
- 1 tablespoon of balsamic vinegar 
- 1 teaspoon of mustard 
- a few tarragon leaves

  • Cook the quinoa as directed on the packet.
  • Chop the red onion.
  • Cut the cherry tomatoes in half and the cucumber in small cubes.
  • Mix the oil and vinegar then add the mustard.
  • Chop the tarragon and stir into the vinaigrette.
  • Drain the quinoa and run it under cold water.
  • Mix all the ingredients, keeping the vinaigrette aside.
  • Just before serving, add the vinaigrette and cut a few shavings of the shallot pencil.
