Brioche, almond and apricot | Ginger Carving Seasoning

Recipe imagined by Arthur Huet, assistant of the Savant Food

For 4 people : 

- 4 slices of brioche
- 4 apricots
- 50 g of sugar
- 50 g of water
- Rosemary
- 125 g ground almonds
- 125 g of sugar
- 125 g soft butter
- 2 eggs
    1. Prepare a syrup with the sugar, water and rosemary. 
    2. Cut the apricots and brown them with a knob of butter and a little syrup.
    3. Make a softened butter and add the eggs, the almond powder and mix well.
    4. Using a pastry brush, lightly brush the brioches with the apricot cooking syrup. 
    5. Then brown them in a knob of butter.
    6. Preheat your oven on grill mode.
    7. Arrange the almond powder on the slice of brioche.
    8. Then grill for a few minutes. 
    9. Slice and arrange the fried apricots on your slice of brioche.
    10. Enjoy chilled with shavings of the Ginger pencil.
