
Recipe of Foie gras apple and coffee & Black garlic
For 4 people:
- A block of foie gras
- 4 Ariane apples
- 100 gr of sugar
- 20 cl of cream
- 50 gr of coffee beans
- 1 stick of organic Black Garlic seasoning
- Peel the apples, then cut them into small cubes.
- Bring the cream to a boil and pour it over the coffee beans.
- Let the mixture infuse while finishing the recipe.
- Make a caramel with the sugar by adding a few centiliters of water.
- Once the caramel is done, add the apple cubes and let cook over low heat for 10 minutes.
- Remove the cooked apples.
- Cut small pieces of foie gras and keep them chilled.
- Once the cream has cooled, drain the coffee beans.
- Whip the cream into chantilly (if the coffee flavor isn't strong enough for your taste, you can add half an espresso to the cream).
- To finish, plate the warm apples, top with some pieces of foie gras, and make small dots of coffee cream.
- Shave some flakes of Black Garlic Pencil.
