Cauliflower and Orange & Saffron Caviar Recipe

For 4 people:

    1. Make cauliflower caviar using a small knife: cut the surface of the cauliflower to obtain a fine semolina. 
    2. Add the zest and lemon juice to your preparation, then a drizzle of walnut oil.
    3. Zest the orange, then make supremes with the flesh.
    4. Melt butter to sauté the orange supremes.
    5. Plate your cauliflower caviar topped with fish eggs.
    6. Decorate with the different parts of the orange and with saffron pencil shavings.
