Cauliflower and orange caviar | Saffron carving seasoning

Recipe imagined by Arthur Huet, assistant of the Savant Food

For 4 people :

- 1 cauliflower
- Caviar or lumpfish egg
- 2 oranges 
- 1/2 lemon
- Hhazelnut oil

    1. Make a cauliflower caviar using a small knife: cut the surface of the cauliflower to obtain a fine semolina. 
    2. Add the lemon zest and juice to your preparation, then a drizzle of walnut oil.
    3. Zest the orange, then make supremes with the flesh.
    4. Melt the butter to brown the orange supremes.
    5. Prepare your cauliflower caviar by topping it with fish roe.
    6. Decorate with the different parts of the orange and with Saffron pencil shavings.
