
Cauliflower and Orange & Saffron Caviar Recipe
For 4 people:
- 1 cauliflower
- Caviar or lumpfish roe
- 2 oranges
- 1/2 yellow lemon
- Hhazelnut oil
- 1 stick of Safran seasoning

- Make cauliflower caviar using a small knife: cut the surface of the cauliflower to obtain a fine semolina.
- Add the zest and lemon juice to your preparation, then a drizzle of walnut oil.
- Zest the orange, then make supremes with the flesh.
- Melt butter to sauté the orange supremes.
- Plate your cauliflower caviar topped with fish eggs.
- Decorate with the different parts of the orange and with saffron pencil shavings.
