Cauliflower and orange caviar | Saffron carving seasoning
For 4 people :
- 1 cauliflower
- Caviar or lumpfish egg
- 2 oranges
- 1/2 lemon
- Hhazelnut oil
- Make a cauliflower caviar using a small knife: cut the surface of the cauliflower to obtain a fine semolina.
- Add the lemon zest and juice to your preparation, then a drizzle of walnut oil.
- Zest the orange, then make supremes with the flesh.
- Melt the butter to brown the orange supremes.
- Prepare your cauliflower caviar by topping it with fish roe.
- Decorate with the different parts of the orange and with Saffron pencil shavings.
