
Recipe for Poached Pears & Saffron
For 4 people:
- 4 pears
- 3 L of water
- 300 gr of sugar
- 1 vanilla pod
- 250 gr of white chocolate
- 35 cl of liquid cream
- Dark chocolate
- 1 stick of organic Safran seasoning
- Make a syrup by mixing sugar, water, and vanilla.
- Peel the pears.
- Put the pears in the syrup and let cook.
- Once cooked, remove them from the syrup.
- Heat the liquid cream.
- Once boiling, pour the cream over the white chocolate.
- Place the pears in ramekins, pour the white chocolate sauce.
- Decorate with chocolate shavings and enjoy accompanied by Safran pencil shavings.
