Poached pears | Saffron carving seasoning
For 4 people :
- 4 pears
- 3 L of water
- 300 g of sugar
- 1 vanilla pod
- 250 g of white chocolate
- 35 cl of liquid cream
- dark chocolate
- Make a syrup by mixing the sugar, water and vanilla.
- Peel the pears.
- Put the pears in the syrup and cook.
- Once cooked remove them from the syrup.
- Heat the liquid cream.
- Once boiling, pour the cream over the white chocolate.
- Arrange the pears in ramekins, pour the white chocolate sauce.
- Decorate with chocolate shavings and enjoy with shavings of Saffron pencil.
