Recipe for Poached Pears & Saffron

For 4 people:

 

    1. Make a syrup by mixing sugar, water, and vanilla.
    2. Peel the pears.
    3. Put the pears in the syrup and let cook.
    4. Once cooked, remove them from the syrup.
    5. Heat the liquid cream.
    6. Once boiling, pour the cream over the white chocolate.
    7. Place the pears in ramekins, pour the white chocolate sauce.
    8. Decorate with chocolate shavings and enjoy accompanied by Safran pencil shavings.
