Poached pears | Saffron carving seasoning

For 4 people :

- 4 pears
- 3 L of water 
- 300 g of sugar 
- 1 vanilla pod 
- 250 g of white chocolate 
- 35 cl of liquid cream 
- dark chocolate 

 

    1. Make a syrup by mixing the sugar, water and vanilla.
    2. Peel the pears.
    3. Put the pears in the syrup and cook.
    4. Once cooked remove them from the syrup.
    5. Heat the liquid cream.
    6. Once boiling, pour the cream over the white chocolate.
    7. Arrange the pears in ramekins, pour the white chocolate sauce.
    8. Decorate with chocolate shavings and enjoy with shavings of Saffron pencil.
