Zucchini Spaghetti & Preserved Lemon Recipe

For 2 people:

  

  1. Wash and cut off the ends of the zucchinis.
  2. Make spaghetti using a mandoline, stopping before the center (to avoid zucchini puree during cooking).
  3. Slice and sauté the onion and garlic.
  4. Add the zucchini spaghetti and sauté for 8 minutes.
  5. Chop the herbs and mix them into the zucchinis.
  6. Zest the lemon and add the juice to the mixture to deglaze your pan.
  7. Remove from heat and enjoy directly with the preserved lemon seasoning.
