Recipe for Potato Chips and Cumin & Porcini Sauce

For 4 people:

  • 3 potatoes
  • 100 g of fromage blanc
  • 2 g of cumin
  • 1 g of turmeric (for color)
  • 2 tablespoons of wine vinegar
  • Sunflower oil
  • Salt, pepper
  • 1 seasoning stick with Cèpe

 

    1. Peel and thinly slice the potatoes.
    2. Put the slices in cold water.
    3. Heat oil in a saucepan.
    4. Mix the fromage blanc, cumin, vinegar, and turmeric.
    5. Fry the potatoes in the oil.
    6. Remove the chips from the oil bath when they no longer bubble in the oil and place them on absorbent paper.
    7. Salt and pepper the chips.
    8. Enjoy the chips with the cumin sauce accompanied by lime pencil shavings, or enjoy them alone paired with the porcini pencil.
